    Went to Denver and stayed at the Magnolia Hotel.  This place is right on the same block, so super convenient.  When I saw what the hotel was serving for lunch to my group (pizza no self-respecting New Yorker would touch), I ditched and came here.  What a great move!  

    I ordered the rare beef Pho and spring  rolls, and both were amazing.  Crunchy sprouts, fresh herbs, and of course Hoisin and Sriracha to accompany.  The broth itself was outstanding, with some deeper notes and flavorings that really gave it a wonderful texture in the mouth. (Hey, this sounds like a wine review....)  Service was fast and with a smile, always, and the iced Vietnamese coffee was excellent.  I loved it so much I ordered some "to-go" the next day, and brought it back to my room so I could get some work done.  The "to-go" box comes with everything you need to add to the hot broth - rice noodles, sprouts, herbs, sauces, etc.  Here's the wild part - the beef came raw and pre-sliced in a saran-wrapped package - I added it to the piping hot soup and voila - beef sous-vide! in my hotel room!  I thought this was awesome.  And the best part was, the container was full of broth, so you could add a little, eat a little, add a little more, etc.  Just be sure to add the beef to the Pho while its hot so it cooks a bit!  I added all the beef, stirred, waited, and then added noodles etc.

    Overall - a great find.  You have to walk through the double doors outside to see the restaurant inside, although there are good signs outside to show you where to go. If you work/visit downtown Denver, be sure to check this place out!

    Was expecting the worst but was thoroughly surprised! I wanted a quick pho fix and wanted something authentic (farther out of downtown I assumed) but got a great bowl of pho.

    Everything was really good - I got the rare meat and brisket - very plentiful amount if meat which I was happy about. Good noodles without clumping and didnt taste old. Broth was flavor, well seasoned and tasted authetnic.

    Tip: I like mine spicy so ask for chili oil from the back and avoid the overpowering sriracha.

    I'll be back! Was relatively empty for lunchtime on a weekday and being located off of 16th street.

    Not sure with all of the popular reviews. I got DoorDash today from What the Pho and was excited with all of the favorable ratings.

    The springs rolls I was most excited for and the were a let down. Peanut sauce was so thick and had no taste other than peanut butter, usually there's a little fish sauce or a thin consistency but this sauce did not contain any of that. Major let down.

    The vermacelli noodle bowl was a another let down. I ordered the combination, there was one piece of shrimp...yes just one. Bummer. The meat and chicken were SOO dry and chewy. The sauce luckily rehydrated some of it but it was a let down.

    This place is not authentic and or worth going too.

    We were in Denver performing with the cast of Miss Saigon at the Buell Theater and we ended up eating here most days. Delicious pho, friendly staff, GREAT Vietnamese Coffee. Next time I'm in Denver, I definitely would stop in again. Thank you!

    Big servings, the taste is alright but the service is good. What bothered me the most though is that they added 21% gratuity automatically in your bill for just a party of 3. What the phoCK?!  It's a simply ripped off!!!!
